Using a large cast iron griddle, frying pan, or large nonstick skillet (I used our electric blackstone) melt butter and gently place french toast slices on top.

Allow first side to cook undisturbed on moderate heat or medium high heat for 6-7 minutes. Flip and cook other side for 5-6 minutes or until golden brown.

In a small saucepan, add 8-10oz of frozen fruit and sugar, and optionally a splash of water.

Cook on medium high heat, allow to simmer for 10 minutes stirring periodically. Remove from heat. Let cool 2-3 minutes for a warm berry compote.

Ingredients

  • 6 slices brioche bread (I used Sarah Lee)
  • ¾ cups heavy cream
  • 1 egg
  • ½ tablespoon cinnamon
  • ½ tablespoon sugar
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • butter

Mixed Berry Compote

  • 8-10 oz mixed berry fruit (I used 8oz frozen mixed berry)
  • 2 tablespoon sugar

Instructions

French Toast

  • whisk egg, heavy cream, cinnamon, sugar, nutmeg and vanilla extract. mix thoroughly until well incorporated and no clumps
  • Dip bread slices in custard mixture and flip. Soak for 10 seconds on each side.
  • Turn stovetop or griddle to medium high, melt butter. Gently place french toast and cook undisturbed for 6-7 minutes. Flip and cook an additional 5-6 minutes on the other side. Remove from heat

Mixed Berry Compote

  • In saucepan, add fruit and sugar, simmer on medium high for 10 minutes. Stir periodically, mush some (not all) to release juices. Remove from heat (If using fresh fruit reduce time). Plate french toast and top with compote.
