Sausage Shrimp Fajita Pasta Ingredients

FOR NAME:

  • Penne pasta– use one 1lb, you could also opt for fettucine if you prefer a longer pasta.
  • Andouille sausage– I chose a mild flavor, but cajun or hot is good too.
  • Shrimp– peeled and deveined, preferably jumbo size.
  • Heavy cream
  • Fajita veggies– red bell peppers, green bell peppers and onions
  • Cheese– you can stick with parmesan, but I also used sharp cheddar and smoked gouda
  • Butter– unsalted is best, so you can control the sodium level of the dish
  • Seasoning– Salt, pepper, garlic powder, smoked paprika, chili powder and cumin
  • Chicken Broth
  • Garlic– I usually recommend minced garlic, but I used garlic paste to save time

Instructions

  • Add pasta to pot of salted boiling water
  • Slice 5-6 sausage links at a bias
  • In a large skillet, add a spoon of butter and cook sausage on each side for 3-4 minutes. Remove from skillet.
  • Lightly season shrimp with salt, pepper, garlic and chili powder. Cook on each side for 1 minute. Remove from skillet.
  • Add more butter and sauté onions for 2 minutes before adding bell peppers. Cook an additional 2 minutes.
  • Add garlic paste and chicken broth and continue to stir at a simmer
  • Add heavy whipping cream, mix well and bring to a simmer. Add seasoning, stir until well incorporated. Occasionally stir and allow sauce to thicken. 15-20 minutes.
  • Remove from heat and stir in cheese until melted and fully combined. Add pasta, sausage and shrimp. Mix well.

  • 1 pound penne pasta
  • 5-6 links Andouille sausage
  • 1 pound shrimp
  • 3 cups heavy cream
  • ½ cup chicken broth
  • 1 red bell pepper
  • 1 green bell pepper
  • ½ onion onion
  • cup cheese (½ cup of each parmesan, sharp cheddar, smoked gouda)
  • ½ tablespoon butter
  • 1 tablespoon garlic paste
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon cumin

Instructions

  • Add pasta to pot of salted boiling water. Cook until done. Save 1/2 cup pasta water. Drain set pasta aside.
